Easy Cinnamon Roll Coffee Cake
Ingredients
Cake:
3 cups flour
1 cup granulated sugar
2 large eggs
1 ½ cups whole milk, 2% is fine also
1 tbsp baking powder
1 tsp vanilla extract
Topping:
1 cup butter, melted and unsalted
1 cup brown sugar
3 tsp cinnamon
2 tbsp flour
Glaze:
1 cup powdered sugar
1 tsp vanilla
2 to 3 tbsp milk
Instructions
Step 1:
Preheat the oven to 350*
Spray the baking pan with non stick spray, preferably one with flour in it
Step 2:
In a large bowl combine the flour, eggs, vanilla, sugar and milk, and the baking powder
Mix well to combine all ingredients
Step 3:
Pour into the prepared cake pan
In a different bowl place the brown sugar, flour, cinnamon and melted butter
Step 4:
Stir to combine well
Dribble or drop by spoonfuls the topping mixture
Step 5:
Using a knife, pull through the cake mix and the topping to obtain a marbling effect
Bake at 350* for 35 to 40 minutes
Step 6:
Check with a toothpick for doneness, bake a few more minutes if needed
In a smaller bowl, combine the powdered sugar, vanilla and the milk
Step 7:
Stir well to make a glaze
When the cake is still warm, drizzle the glaze mix over the top of the cake.
Step 8:
Set to the side until the glaze has set completely
