{"id":4291,"date":"2023-05-06T06:12:02","date_gmt":"2023-05-05T23:12:02","guid":{"rendered":"https:\/\/samyenlinhchi.com\/cooking\/?p=4291"},"modified":"2023-05-06T06:12:02","modified_gmt":"2023-05-05T23:12:02","slug":"vegetable-beef-soup","status":"publish","type":"post","link":"https:\/\/samyenlinhchi.com\/cooking\/vegetable-beef-soup.html","title":{"rendered":"Vegetable Beef Soup"},"content":{"rendered":"<h2>How to make Vegetable Beef Soup<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4292\" src=\"http:\/\/samyenlinhchi.com\/cooking\/wp-content\/uploads\/2023\/05\/344969470_1168763090425685_6370261906211859368_n.jpg\" alt=\"\" width=\"765\" height=\"1024\" srcset=\"https:\/\/samyenlinhchi.com\/cooking\/wp-content\/uploads\/2023\/05\/344969470_1168763090425685_6370261906211859368_n.jpg 765w, https:\/\/samyenlinhchi.com\/cooking\/wp-content\/uploads\/2023\/05\/344969470_1168763090425685_6370261906211859368_n-224x300.jpg 224w\" sizes=\"(max-width: 765px) 100vw, 765px\" \/><\/p>\n<h2>Ingredients<\/h2>\n<p>1 1\/2 lbs beef stew meat<\/p>\n<p>2 1\/2 Tbsp olive oil, divided<\/p>\n<p>Salt and freshly ground black pepper<\/p>\n<p>1 3\/4 cups chopped yellow onion (1 large)<\/p>\n<p>1 1\/4 cups peeled and chopped carrots (3 medium)<\/p>\n<p>1 cup chopped celery (3 medium)<\/p>\n<p>1 1\/2 Tbsp minced garlic (4 cloves)<\/p>\n<p>8 cups low-sodium beef broth or chicken broth<\/p>\n<p>2 (14 oz.) cans diced tomatoes<\/p>\n<p>1 1\/2 tsp dried basil<\/p>\n<p>1 tsp dried oregano<\/p>\n<p>1\/2 tsp dried thyme<\/p>\n<p>1 lb red or yellow potatoes, chopped into 3\/4-inch cubes<\/p>\n<p>1 1\/2 cups (5 oz.) chopped green beans (trim ends first)<\/p>\n<p>1 1\/2 cups frozen corn<\/p>\n<p>1 cup frozen peas<\/p>\n<p>1\/3 cup chopped fresh parsley<\/p>\n<h2>Instructions:<\/h2>\n<p>Heat 1 Tbsp olive oil in a large pot over medium-high heat.<\/p>\n<p>Dab beef dry with paper towels, season with salt and pepper then add half of the beef to pot and brown about 4 minutes, turning halfway through.<\/p>\n<p>Transfer to a plate add another 1\/2 Tbsp oil to pot and repeat process with remaining half of beef.<\/p>\n<p>Add another 1 Tbsp oil to now empty pot then add onions, carrots, and celery then saute 3 minutes, add garlic saute 1 minute longer.<\/p>\n<p>Pour in broth, tomatoes, browned beef, basil, oregano, thyme and season with salt and pepper. Bring to a boil then reduce heat to low, cover and simmer, stirring once or twice throughout, for 30 minutes.<\/p>\n<p>Add potatoes then continue to simmer, covered, 20 minutes (you can also add green beans with potatoes if you like them very soft).<\/p>\n<p>Stir in green beans and simmer 15 minutes longer, or until all of the veggies and beef are tender.<\/p>\n<p>Pour in corn and peas and simmer until heated through, about 5 minutes.
