\/><\/p>\n<h2>Ingredients<\/h2>\n<p><strong>Cake:<\/strong><\/p>\n<p>\u00bd cup butter, unsalted and at room temperature<\/p>\n<p>1 jar maraschino cherries, drained, but save the juice<\/p>\n<p>1 \u00bd cups sugar<\/p>\n<p>4 egg whites<\/p>\n<p>\u00bc tsp almond extract<\/p>\n<p>1 tsp vanilla extract<\/p>\n<p>2 tsp baking powder<\/p>\n<p>\u00bd tsp baking soda<\/p>\n<p>1 \u2153 cup buttermilk<\/p>\n<p>2 tbsp cherry juice<\/p>\n<p><strong>Frosting:<\/strong><\/p>\n<p>\u00bd cup butter, softened<\/p>\n<p>8 ounces cream cheese, softened but still cool<\/p>\n<p>1 to 2 tbsp cherry juice<\/p>\n<p>1 tsp vanilla extract<\/p>\n<p>\u00bd tsp almond extract<\/p>\n<p>4 cups powdered sugar<\/p>\n<h2>Instructions<\/h2>\n<p>Preheat the oven to 350*, grease and flour two round 8 inch cake pans<\/p>\n<p>Drain the cherries, saving the juice to use in the cake and the frosting<\/p>\n<p>Finely chop the maraschino cherries and set to the side<\/p>\n<p>Beat the butter and sugar until is is creamy, add the egg whites one at a time, mixing after each<\/p>\n<p>Add in the vanilla extract and the almond extract and mix well<\/p>\n<p>In a separate bowl add in the flour, salt, soda and baking powder<\/p>\n<p>In another bowl mix the buttermilk with the cherry juice<\/p>\n<p>Add the flour mix to the butter in three intervals, alternating with the buttermilk mixture<\/p>\n<p>Mix after each addition and scraping the bowl routinely<\/p>\n<p>Stir in the chopped cherries<\/p>\n<p>Divide the batter between two pans, evenly<\/p>\n<p>Bake until a toothpick comes out clean, about 30 to 35 minutes<\/p>\n<p>Let cool in the pans for 10 minutes, then transfer to a wire rack to cool<\/p>\n<p>For the Frosting: Place the butter and the cream cheese and beat until light and fluffy<\/p>\n<p>Gradually add the powdered sugar and mix until smooth, then add in vanilla and almond extracts, with the cherry juice and mix very well to combine<\/p>\n<p>Use \u00bd cup of frosting on the top of the first layer, place the second layer on top and repeat with the frosting on the top layer.<\/p>\n<p>Then frost the sides of the cake<\/p>\n<p>Enjoy!<\/p>\n<h2>Nutrition
